Roasted Carrot Salad

 

You really don’t need to wait for a special occasion, but this beautiful dish will make any occasion special! Go ahead and make this one as a main lunch entry or an elegant side dish. You’ll be very happy to have this on your table!

Ingredients:

2 lb carrots, peeled and trimmed

3 T. olive oil

Salt and pepper

Tahini Dressing:

2 T. Tahini (sesame paste)

3 T. olive oil

2 T. lemon juice

1 clove garlic, minced

2 T. water

Salt and pepper

Topping:

1 cup chickpeas or white beans

½ cup feta or goat cheese

¼ cup fresh parsley or dill, chopped

¼ cup pomegranate seeds

Toss the peeled carrots with olive oil and salt and pepper. Place on a parchment lined baking sheet and

roast the carrots in a 400 degree oven for 20-25 minutes.

Dressing: Combine the dressing ingredients in a jar with a lid and shake rigorously to combine or whisk in a bowl. Pour the dressing over the carrots and top with the assorted toppings. Divine!
