Roasted Garlic Chickpea Soup for Radiant Skin

 

Here it is...the secret for radiant skin! Full of antioxidant and anti-inflammatory properties, we eat this soup simply because it tastes good! And we do feel really good after we eat it! Give this easy one a try...I have a video on roasting garlic on the you tube channel too if you want any help with that :)

Ingredients:

2 T. olive oil

1 small onion, chopped

1 carrot, chopped

1 celery stalk, chopped

2 cups of chickpeas

1 head of garlic, roasted  (see below for instructions)

1 sprig of fresh rosemary

2 quarts of chicken stock

Salt and pepper to taste

Juice and zest from 1 lemon

1 lemon, zest and juice

To roast garlic:

Cut off the top ¼ of the garlic head, exposing the inner garlic cloves. Drizzle with ½ tsp. olive oil. Wrap in aluminum foil and place in a 350f oven for 25 minutes.

In a large soup pot, saute onion, carrots and celery in olive oil over medium heat for about 10 minutes. Add in chickpeas, rosemary, roasted garlic and chicken stock and simmer 20 minutes.

Use an immersion blender to puree some of the soup creating a creamier texture.

 Add the lemon zest and parsley and serve.

This is so simple and delicious and is said to give your skin that extra glow!
