Carrot, Ginger, and Lemon Soup

 

Fresh and bright! Am I talking about the soup or who the soup is mirroring?! Check out the attached video to see what I mean! Lorie Ward, the owner of Fairhope Juice Company and I made this soup with the same ingredients as one of her best selling fresh pressed juices! We had a blast and whether you sip or slurp these ingredients, you’ve got a winning combination of ingredients!

Ingredients: (Serves 4-6)

½ stick butter or 2 T olive oil

1  ½ c onion, chopped

1 inch of ginger, peeled and chopped

1 clove garlic, minced

3 cups chopped carrots

1 ⅓ c fresh tomatoes, diced or 15oz can diced tomatoes

½ inch fresh turmeric, peeled and chopped or ½ tsp dried

Zest and juice of 1 lemon

3 cups chicken or vegetable stock

In a large soup pot, melt butter and add in the garlic, onion and ginger over medium heat. Stirring occasionally, saute until vegetables soften. Add in carrots, tomatoes, turmeric, lemon zest and juice and stock. Bring to a boil, reduce to a simmer (med-low heat) for 20 minutes or until carrots are tender. Puree in a blender, processor of with an immersion blender
