Homemade Tomato Soup

Ingredients:

2 T olive oil

1 T butter

1 onion, chopped finely

1 garlic clove, crushed

2 T flour

3 c chicken stock

1 28 oz can plum tomatoes

½ tsp sugar

1 sprig fresh thyme

Salt and pepper

Fresh herbs - basil, chives, thyme, rosemary - chopped and sprinkled on top

In a large pot, saute onion and garlic in the olive oil over medium heat for about 6-7 minutes, onions will soften. Add the flour and stir for 1-2 minutes to cook the flour a little bit. Add in the broth, tomatoes, sugar, thyme, salt and pepper. Reduce to low and allow to simmer 40 minutes or so. Remove the sprig of thyme and use an immersion blender to puree the soup. A blender could be used also. Garnish with chopped herbs.
