Pesto Mozzarella Grilled Cheese “Dippers”

Ingredients:

2 slices of thin bread (we used pepperidge farm)

½ c shredded or fresh mozzarella cheese

2 T pesto (prepared or homemade)

Lay out the two slices of bread. Spread pesto on one slice of bread. Lay shredded cheese on top of pesto. Place other slice of bread on top forming a sandwich. 

Heat a skillet to medium heat, melt 1 T butter in pan and place sandwich in pan. Grill to golden brown, 2-3 minutes, pressing on top piece of bread to compress the sandwich, flip and grill the other side. Add more butter to the pan if needed.  

Remove from pan, allow to cool slightly and slice in strips or cut into shapes..we used a big heart cookie cutter. Be creative!
