Asparagus Patch Soup

 

A trip down the frozen food aisle never tasted so fresh! The pesto gives this easy soup just the right zip, ton’s of fresh flavor in this one. Freezes great too!

Ingredients:

2 T butter or ghee

2 T olive oil

1 large onion, chopped

3 lb zucchini, sliced

6 c chicken broth

1 10 oz package of frozen lima beans

1 10 oz package of frozen asparagus

1 10 oz package of frozen peas

3 T pesto

In a large saute pan saute the chopped onion in the melted butter(ghee) and olive oil. Add the sliced zucchini and saute until softened, about 5 minutes on medium heat.

Add in the chicken stock and frozen vegetables and bring to a boil, then simmer for 20 minutes. Using an immersion blender or food processor, blend the ingredients until desired consistency. I like mine partially chunky.
