Crusty Grilled Shrimp with Sesame-Soy Drizzle Sauce

Ingredients:

1 lb peeled deveined shrimp

½ c. olive oil

1 small lemon, zested and juiced

⅔ c dry unflavored bread crumbs

1 clove of garlic, minced

2 T fresh parsley, chopped

Salt and pepper

Combine the breadcrumbs, olive oil, lemon zest and juice, garlic, parsley and salt and pepper. Press the shrimp into the breadcrumbs to coat the shrimp and slide them onto a skewer. Broil for 3-4 minutes per side, until golden brown.

Sesame-soy drizzle sauce:

¼ c. soy sauce or coconut aminos

¼ c. rice wine vinegar

Combine the ingredients, drizzle over the broiled shrimp or offer as a dipping sauce.
