Peach and Gorgonzola Pizza with Spicy Honey

 

If you’ve got a wood burning pizza oven…how fabulous! If you’re like the rest of us and making this on your grill or oven at home, no matter, we can all enjoy this amazing combination of creamy gorgonzola, spicy salami and sweet juicy peaches! Fresh lemon zest and thyme add earthy elements and a quick drizzle of spicy honey when the pizza comes out of the oven send this flavor combination to the top of the charts! It was our favorite combination, and we did get to use a fabulous outdoor pizza oven for ours so come take a look at this outdoor garden party!

Ingredients:

Pizza dough (I used a purchased dough)

Cornmeal for dusting the pan

1 T. olive oil

1 fresh peach - sliced

¼ cup gorgonzola cheese

¼ tsp fresh thyme

5 slices of Prosciutto or Salami

Fresh lemon zest and juice from 1 lemon

Spicy honey (½ c honey with ¼ tsp dried chili flakes stirred in)

Dust a baking pan with cornmeal, stretch a pizza dough disk out to desired thickness. Spread olive oil over the dough, and add the peaches, gorgonzola and salami.

Remember, the trick to crispy pizza is less is more!

If you’re lucky enough to be using a pizza oven bake it 3-4 minutes. If grilling it will take about 12 minutes or so and same in a 400 degree oven. Turning about halfway through no matter which oven you’re using. Drizzle with spicy honey, lemon zest and a squeeze of lemon juice and cut in quarters to enjoy!
