Thai Pickled Shallots

Ingredients:

2 thinly sliced shallot

2 minced garlic cloves

1 sliced red thai chili 

2 T fresh lime juice

2 T rice vinegar

½ t sugar

½ t salt

1 T water

Combine and allow to rest for 20 minutes before serving. Keeps well in the refrigerator for a week.
