Fajita Spice Blend

Ingredients:

1 T cornstarch

1 tsp chili powder

1 tsp salt

1 tsp paprika

½ t sugar

1 t garlic salt

1 t cumin 

¼ t cayenne

Combine spices and keep in an airtight jar for several months in a cool dark place.

To make fajitas:

Sauté sliced onions to soften (2-3 minutes) over medium heat, add in sliced peppers (any color) and sliced mushrooms and sprinkle with 1 T fajita blend per 1 cup of vegetables. Add ¼ cup of water to make a little sauce. Stir to combine and serve with warmed tortillas, avocado and cilantro and your favorite hot sauce!

This is the vegetarian option, feel free to add chicken, shrimp or beef!
