Carrot Ginger Dressing

Ingredients:

2 medium carrots - chopped

2 in piece ginger - grated

1 shallot or garlic

1/3 cup  rice wine vinegar

2 Tsp lime juice

1 tsp honey

1 ½ tsp sesame oil

⅓ c olive oil

 Salt and pepper to taste

¼ c water - optional

Combine carrots, ginger, garlic, vinegar, lime juice, sesame oil and honey in a blender. Puree, add olive oil, puree again. Add water to desired consistency 1-2 tablespoons at a time.
