Ice Cream with Toasted Pine Nuts and Honey

 

The sundae takes a sweet and surprisingly sophisticated turn with pignolia nuts and good quality honey. However, the palate does not have to be sophisticated to enjoy this delicious combination! So serve it to kids and adults alike, and show them all just how special they are to you!

For the Sundae:

½ c. pine nuts (also known as pignoli nuts)

½ gallon good vanilla ice cream

½ c. good quality honey

In a small dry pan over medium heat toast pine nuts, about 4-5 minutes, stirring frequently so they don’t burn.

Prepare individual servings by scooping 2 scoops of vanilla ice cream and top with a sprinkling of the pine nuts and a drizzle of honey. This is delicious!

Other options:

- A sprinkle of dried lavender is aromatic and adds an interesting twist!

- Pine nuts tend to be expensive, pistachios, cashews, almonds and walnuts would work here as well. Do toast them first.

- I love fresh local honey, the quality of the honey does make a difference especially in this recipe..so get the best honey you can find!
