Fresh Mangoes with Cream

 

Light as a cloud and fresh as a trip to the Bahamas, this is sunshine and happiness in a bowl. If you’re dairy-free (or not), whip up some coconut cream for a fun spin! This dessert is heavenly and will bring lightness and laughter into your home!

For the Mangoes:

3 ripe mangoes, cut into bite size chunks

1 c. heavy cream

2-3 T. confectioners sugar

1 t. vanilla

2 T. brown sugar

1 ½  t. cinnamon

Cut the mangoes into chunks and set aside.

Whip cream with confectioner sugar and vanilla until soft peaks form with a mixer.

Mix the brown sugar and cinnamon in a small bowl.

Fold the cut mangoes into the cream. Spoon into dessert bowls, sprinkle with the brown sugar and cinnamon mixture and serve.

Options:

Peaches make a great substitute for the mangoes, use whichever are the freshest and in season, enjoy!

A delicious nondairy idea: Whip coconut cream instead of the cream. The coconut flavor pairs beautifully with the mangoes!
