Berry Galette

Ingredients:

Purchased pie crust

4 cups fresh berries (2c blackberry/2c Blueberry)

1 T flour

1 T lemon juice and zest

⅓ c sugar 

1 T apricot jam, melted

1 egg, beaten

Vanilla ice cream

Roll out one of the pie crusts (the package usually comes with two, the other can be frozen for another time). Place on a baking sheet lined with parchment paper.

In a large bowl, combine berries, lemon juice and zest and sugar. Pour into the center of the pie crust. Spread berries to cover only the center, we are going to fold the outer edges to form a crust. Fold dough edges up and towards center but not all the way to the center. The center will be exposed. Brush the berries with the melted apricot jam and brush the pastry with the egg and a pinch more sugar. Bake at 425 degrees for 10 minutes then reduce oven temp to 350degrees and continue baking 15-20 min longer, until hot and bubbly.

Serve with ice cream.
