Overnight Corn

 

My sister gave me this recipe and it’s a winner! It takes a little planning ahead but if you’re a do it ahead person this works great with that mentality! Fresh corn marinates overnight in ginger, garlic and a chili and takes a quick warm up in hot melted butter on the day of serving. Your guests won’t know why this corn is so addicting.. it’s those mild hints of overnight flavor that just make this oh so good! Do try this, it will quickly become a favorite summer time go to!

Recipe (serves 4-6):

8 ears of corn, shucked and kernels cut off the cobb

2 inch piece of ginger, grated

1 garlic clove minced

1 serrano chile, seeded and minced

Combine ingredients and refrigerate overnight for flavors to combine.

Saute in a large pan with 1 stick of butter or 2 T. olive oil, salt and pepper to taste and cook about 4-5 min to warm through.

This is a fantastic and unusual twist on summertime corn!
