Black Bean Mango Chili

 

One of my most requested recipes! This meatless combination of black beans, quinoa and mango make for a hearty but bright one bowl meal. Great for entertaining or big batch cooking, it’s delicious and freezes great! Do top it with fresh mango or fresh mango salsa to make it shine! Ingredients: (serves 4-6)

2 cloves of garlic, minced

2 T. olive oil

¼ red onion, chopped

1 yellow pepper, small dice

1 orange pepper, small dice

1 T. dried cumin

2 T. chili powder

½ T. allspice

1 T. worcestershire sauce

39oz. can black beans

1 28 oz can crushed tomatoes

1 28 oz can diced tomatoes

2 T. tomato paste

2 mangoes diced

1 c. Quinoa, cooked

Saute onion and garlic in olive oil over medium heat in a large pot for 4-5  minutes or until they start to brown, add in yellow and orange chopped peppers and saute another 4 minutes until peppers start to soften. Add in the cumin, chili powder, allspice and the worcestershire sauce. Add in the black beans, both cans of tomatoes, tomato paste, mango and the cooked quinoa. Simmer 20 minutes, then serve, topped with mango salsa.


Mango Salsa: Combine ingredients, toss to combine.

1 mango, diced

1 avocado, diced

1 lime, zested and juiced

2 T. chopped red onion

1 T. olive oil

½ tsp honey - optional
