Black Bean Burgers

Ingredients:

1 16oz can of black beans - drained

½ bell pepper (I like color so I use red, yellow or orange peppers) - chopped

¼ c diced onion - I used purple onion but any onion will do

½ serano chile (or 1 tsp hot sauce) - finely chopped

1 clove of garlic, finely chopped

1 T chile powder

1 T cumin

1 T fresh cilantro

1 egg

½ c breadcrumbs

Salt and pepper

Pour the black beans into a mixing bowl and mash to desired consistency with the back of a fork. I like a few whole beans with about ¾ mashed. Mix in the pepper ,onion, garlic, serano, chili powder, cumin, and egg. Combine. Add bread crumbs, salt, and pepper and combine again. Form into patties and pan cook in a pan over medium heat, 6-8 minutes per side.

Place on toasted buns with your favorite toppings. We like dijon mustard, avocado, tomato, red onion and butter lettuce. You will love these!
