Chia Pudding

 

I’m not a trend follower…so I was late to the game with chia pudding. It just didn’t sound that good to me honestly so I put off trying it. My first chia pudding was eaten halfway around the world, a little mason jar with chia pudding, mango, honey and mint was offered one morning at breakfast and I quickly realized that I had, indeed, been missing out. This isn’t an overly sweet pudding so the honey really shines and the chia seeds soften and combine with mango in the most delicious way. Even better news is how incredibly simple this is to make! Ingredients:

2 T. Chia seeds

½ c. almond milk or any nut milk

¼ tsp. honey

1 small mason jar

Combine all of the ingredients and shake to combine. Place in refrigerator for 5 minutes then give it another good shake, this will prevent clumps and the seeds settling to the bottom. Refrigerate overnight.

Suggested toppings:

Mango, coconut and another drizzle of honey. Enjoy!
