Tomatillo Salsa

8 medium tomatillos - husked and coarsely chopped

1 T. red onion, chopped

½ T minced jalapeno

2 T fresh lime juice

2 T coarsely chopped cilantro

1 T olive oil

1 tsp honey

Salt and pepper

Coarsely chop the tomatillos and pace in a processor until pureed with a few small chunks. Add in the other ingredients. Stir to combine.


Serve With: 3 Layer Tortas

(Makes 3)

9 Tortillas

1 cup Monterey jack cheese grated

1 cup feta cheese

3 T fresh oregano

3 T. chopped red onion

1 T. olive oil

Sea salt

Layer 1 tortilla with monterey jack cheese, feta, red onion and oregano, place another tortilla on top and repeat. Place the third tortilla on top and rub with olive oil to coat, sprinkle with sea salt and bake at 400 degrees for about 10 minutes, until the cheese is melted and the top is golden brown.
