Lemoney-Smashed Pea Hummus

Sweet pea…apple of my eye

Avocados skoosh over, we are adding smashed pea toast to our repertoire! These lemony freezer staples are economic, tasty and a fresh alternative to our favorite avocado toasts. Toppings are limitless and I had so much fun making these for a kids class recently. The kids smashed the peas with a pestle (and their hands!) and we had a ball. We made ours outside at a picnic table and went down to the creek afterwards to wash up...an amazing way to spend the day enjoying our beautiful world!

wildflowers and fresh food pea toast

Ingredients:

2 cups frozen green peas

1 T. tahini

2 T. fresh squeezed lemon juice and zest

¼ tsp. garlic powder

¼ c fresh parsley or basil

salt and pepper to taste

Toasted bread

Extras:

Green onion

Radish

Seeds - such as sesame, pumpkin, chia...your favorites!

Everything but the bagel seasoning

Shredded carrots

Steam frozen peas by adding boiling water in a covered pot for 2-3 minutes, until vibrant green. Be careful not to overcook! Drain off the water and place the peas in a bowl.  Smash them (or place in a blender or food processor) with the tahini, lemon zest and juice, garlic powder, salt and pepper.

Spread over the toast and sprinkle with the extras!
