Fresh Peach and Corn Salsa

 

Okay…summer goodness just all jumped into the pool! Juicy peaches, crisp corn, chilis, and fresh herbs combine into a salsa that no one can refuse. Use it in all the places you’d use any salsa or try it with my favorite summer appetizer…melted brie topped with peach and corn salsa. You can do one of those whole wheels of baked brie and top it with this salsa or do little individual crostini with brie baked and melted and topped with this salsa. Either way it’s a party, have a blast and enjoy. Life is fun, and we have the recipes to celebrate every minute of it!

Recipe (serves 4-6):
2 peaches, chopped

2 ears of corn, shucked and kernels cut off cobb

½ serrano chile, seeded and minced

2 T fresh basil

1 T. red onion, chopped

1 whole lime, zested and juiced

1 T. balsamic vinegar

2 T. olive oil

Combine ingredients and serve.

Suggestions:

Serve with tortilla chips

Serve with fish or chicken

Serve over warm brie cheese with crackers - my favorite!
