Lavender Honey Ginger Baked Pears

 

Sweet story alert: I live in a darling town. I fell in love with it the first time I stepped onto the city side walk. Same for my house, a little cottage within walking distance of the cute little town. Too cute for you?… I’m not finished. At the end of my street are the sweetest of neighbors, they were given a pair of pear trees when they were first married, 30 plus years later the pears trees flourish and at the peak of the season they put out a long handled picker, bags and and greet all with a sign to “help yourself”! These baked pears are a result of walks down the street, visits with neighbors and walks home with bags full of fresh pears. So yes, these baked pears are reminiscent of all that’s good and special to me. Living in a place you love, among people you love, sharing love. And these pears are sappy as that story.. dripping with honey and filled with warm ginger and spice. Love it.

Ingredients:

4 small pears
2 T ghee or butter
1 T honey
1/4 tsp dried ginger
1/4 tsp dried lavender (optional)

Preheat oven to 350 degrees.

Cut off the bottoms of the pears so they could stand upright without tipping. Then cut around the stem and scoop into the pear with a melon baller to make a hole. Place the pears on a large piece of parchment paper in an oven safe dish.

Melt the butter, honey, ginger and lavender together and pour it over the pears filling up those little wells, then top with the stems and wrap it all up tight and bake for 40 minutes or so, until a knife goes in smoothly.


These are delicious as is but if you’d like to take it up another notch, add a scoop of vanilla ice cream! And if you’d like to reallly notch it up, add a drizzle of espresso balsamic vinegar.
