Chocolate Mousse

Ingredients:

¾ c bittersweet chocolate - chopped

3 cups heavy cream

1 cup fresh raspberries

Whip 1 cup of cream to stiff peaks.

Melt chocolate in a double boiler or microwave. Allow to cool slightly and slowly whisk in 1 cup of heavy cream. Gently fold the chocolate mixture into the whipped cream. Once combined, add the remaining cup of cream to the mixture. Refrigerate for 20 minutes before serving.

Serve with berries. This is rich, so a little bit goes a long way!
