Thai spring rolls
Rice paper disks
Avocado slices
Basil, mint, cilantro
Red Cabbage shreds
Carrots, shredded
Butter lettuce
Mango strips
Cucumber strips
Protein: shrimp, black rice, chicken
Dip rice paper into warm water for 40-60 seconds, until softened. Lay on a flat surface and place a variety of listed ingredients (your choice!) in the center. Roll burrito style.
Peanut Sauce
¾ c peanut butter
¼ c rice vinegar
⅓ c soy sauce
3 T honey
1 ½ tsp ginger grated
1-2 cloves garlic
¼ tsp red pepper flakes
2-4 T coconut milk or water
Combine ingredients and use as a dipping sauce for Spring rolls or noodles salads
