Red Cabbage Slaw
Crunchy, colorful and lemony-limey, this salad is a terrific side or can be made into a meal! We took it to a friend and it has become a metaphor for our friendship over the years, bright and refreshing…as a friend should be!
Salad:
1 large granny smith apple, slivered
1 small head red cabbage sliced
4 T basil sliced
½ c. walnuts
½ c. feta cheese crumbled
Salt and pepper to taste
Toss together ingredients in a large bowl.
Lemon Lime Dressing:
Zest and juice of 1 lemon
Zest and juice of 1 lime
4 T olive oil
Salt and pepper
Whisk together dressing ingredients and pour over salad. Enjoy! This holds up in the fridge for 3-4 days.
