Beet Pickled Eggs

 

Just the prettiest…and so super simple. Make these once and they will soon become a family tradition. Enjoy!

Ingredients:

1 dozen eggs- hard boiled

2 jars of pickled beets 

2 oranges or satsumas

Hard boil eggs: place them in a pot of cold water, turn on heat to high and bring to a boil. Cover pot. Turn off the heat and leave the pot on the burner with heat off for 12  minutes. Place the eggs in a cold ice bath (bowl of water and ice) for 5 minutes. Drain and peel eggs.

Place peeled eggs in beet juice for 2 hours (I used Aunt Nellie’s pickled beets and just poured the juice from the jar over the eggs. (Save the beets to eat too!)
