Simple Curry

Ingredients:

1-2 T olive oil

1 inch ginger, minced

½ onion, chopped

2 cloves of garlic, minced

1 lb chicken, cut into 1 inch cubes - optional

½ head cauliflower, in flowerettes

1 8-oz package wild blend mushrooms

1 package snow peas

2 T red curry paste

2 cans lite coconut milk ( for a thicker curry, use full fat)

1 tsp soy sauce

1 tsp lime juice

½ c cilantro or basil

Roasted peanuts, to sprinkle on top

Sauté garlic, ginger and onion in olive oil over medium heat until, translucent and fragrant. Add in chicken and sauté for 2-3 minutes, add in veggies and sauté for another 2-3 minutes. Add in curry paste, coconut milk and soy sauce and allow to simmer 20 minutes or so. Top with a squeeze of fresh lime juice, chopped cilantro and peanuts! Serve over a nice pile of jasmine rice for a heartier version.
