Herby Roasted Salmon

 

This pretty salmon is covered in lemon zest and a ton of fresh herbs, a winning combination for sure! The salmon stays extra moist as it cooks in liquid, it’s as simple as can be and as delicious cold the next day as it is hot!

Herby Roasted Salmon:

1 2 lb. salmon fillet

salt and pepper to taste

¼ c. olive oil

2 T. lemon zest and juice

½ c. minced scallions

½ c. minced fresh dill

½ c. minced fresh parsley

¼ c. dry white wine or stock or water

Place the salmon in a roasting dish and season generously with salt and pepper, lemon juice and zest and olive oil and allow to sit for about 10 minutes.

In a small bowl, combine herbs and scatter herb mixture over the fish. Pour the liquid (wine, stock or water) around the fish and bake covered with foil at 400 degrees for 20 minutes. Remove from oven and serve.
