Roasted Brussels Sprouts with Green Apple

 

Oh! These are soooo good. Roasted, charred brussels sprouts with bright lemony flavor and crunchy green apple. You’’ll crave this one!!

Ingredients:

8 oz brussels sprouts, washed and trimmed

½ T apple cider vinegar

1 T olive oil

1 tsp fresh thyme

1 lemon cut in half

1 green apple chopped

Combine all the ingredients except the apple in a large bowl and toss to coat. (yes, you are roasting the lemon :)

Place the ingredients from the bowl on a baking sheet and roast at 400 degrees for 25 minutes or until browned.

Allow to cool, squeeze the lemon over the brussel sprouts and discard the rind or use it as a garnish on your serving dish.  Add the chopped green apple, serve at room temperature


Options:

~Add the apple to the roasting sheet for a warm cooked apple flavor

~Sprinkle with parmesan or feta cheese
