Naturally Strong Chili~Vegetarian Chili

 

Fitness phenom of Fairhope Alabama, Nonie Taul, hasn’t always been this fit. It was a home-based concern with her daughters allergy that started this Mom on the road to healthier eating and fitness. She asked me to help her create a high protein chili for the Super Bowl in this video and we had a super time discussing her road to success and life in general! This was fun!

Ingredients:

1 T. olive oil

2 garlic cloves, chopped

½ red onion, chopped

1 yellow onion, chopped,

1 red pepper, chopped

2 T. chili powder

2 T. ground cumin

1 28 oz. can diced tomatoes

2 15 oz cans black beans

1 T. chipotle peppers in adobo sauce, chopped

1 15 oz can white corn

1 cup cooked quinoa

Toppings: cilantro, avocado, red onion, jalapeno..any other favorite toppings!

Saute garlic and onion in olive oil over medium heat in a large soup pot. Add in peppers and saute 4-5 more minutes until vegetables are softened. Add in the rest of the ingredients and simmer on medium-low heat for 20 minutes or more.

Serve with your favorite toppings!
