Granola and Honey Yogurt

 

There is nothing nicer than opening the fridge in the morning to find this pair of jars filled with honey yogurt and granola. I make it whenever I have family or friends overnight, I let them know the night before that it’s there for them to help themselves in the morning at their leisure. I also like to make it just for myself, its like a little smile when I open the fridge on a busy Monday morning. We should treat ourselves as well as we would treat a guest, right? Do it for yourself, a friend or family…no matter what your reason you’ll be glad you did!

Granola:

4 c. Old Fashioned Oats (not quick oats)

2 c. coconut flakes (sweetened coconut will, of course, make the granola sweeter- you can use either sweetened or unsweetened flakes)

2 c. slivered almonds

¾ c. vegetable oil

½ c. honey ( I prefer good local honey)

Toss the dry ingredients together in a large mixing bowl. Combine the oil and honey and add to the dry ingredients. Spread onto a large baking sheet lined with parchment paper (easy clean up that way). Bake 350F for a total of 40 minutes or until golden brown, stirring around after the first 20 minutes for even cooking.

Once cooled, add in any or all:

½ c. chopped apricots

½ c. walnuts, cashews or pistachios

½ c craisins or dried cherries

YOGURT:

1 quart greek yogurt

1 ½ t. vanilla

¼ c. honey

Zest and juice of 1 orange

6 oz fresh berries - your choice, blackberry, blueberry, strawberry etc.

Combine all of the ingredients thoroughly, stores in refrigerator up to one week.
