Summer Rolls

Ingredients for Summer Rolls:

1 package rice papers

Shallow dish of warm water

Sliced cucumber

Sliced mango

Halved shrimp

Sliced red cabbage

Slivered basil

Butter lettuce

Sliced avocado

Place rice paper in warm water for 30-40 seconds until it becomes malleable. Lay softened rice paper on a flat surface and place desired contents in the center and roll burrito style (fold up sides and then ends). This is a fun recipe to play with ingredients, the suggested list here is just that, suggestions! Use your creativity!

These are best eaten right away. They can be made a few hours in advance and stored in the fridge, cover with damp paper towels and wrap in plastic wrap or parchment.


Peanut sauce:

½ c peanut butter

2 T soy sauce 

1/2 t honey 

1 T fresh lime juice 

1 garlic clove minced 

1 T ginger grated

½ tsp rice wine vinegar

2-4 T warm water

Combine and serve with the summer rolls.
